Beef Pochero (Visayan Style)

Beef Pochero Visayas, also known as Pocherong Bisaya or Pochero de Cebu, is a hearty Filipino beef soup distinct from the tomato-based versions found in Luzon. It is known for its clear, aromatic broth, emphasizing natural sweetness and local ingredients like lemongrass, ginger, and saba bananas.

Key Characteristics

Unlike the Spanish-influenced, tomato-based stews of other regions, the Visayan version is more akin to Bulalo (beef bone marrow soup) and highlights a clean, comforting, and savory broth. The characteristic ingredients include: 

  • Beef Shanks: Often used with the bone (tulan ng baka) for a rich, flavorful broth.
  • Aromatics: Generous amounts of ginger, garlic, onion, and pounded lemongrass are essential for the soup's distinctive aroma.
  • Vegetables: A mix of local produce like saba bananas (plantains), sweet corn, bok choy (pechay), and cabbage.
  • Seasoning: Typically seasoned with fish sauce (patis), salt, and black pepper, rather than tomato sauce or chorizo.
  • Accompaniments: It is traditionally served hot with steamed rice and a side dipping sauce of fish sauce mixed with calamansi or chili

Basic Recipe Overview

The cooking process involves simmering the beef shanks with aromatics until tender, then adding the various vegetables in stages to ensure they are cooked through but not overdone.

  1. Tenderize the Beef: The beef shanks are boiled and simmered for an extensive period (up to 2-3 hours) to ensure the meat is fork-tender and the broth is rich.
  2. Sauté Aromatics: Ginger, garlic, and onions are typically sautéed in a separate pot to build the flavor base.
  3. Combine and Simmer: The sautéed aromatics and tenderized beef are combined in the pot with the broth and other hardy ingredients like corn and saba bananas.
  4. Add Greens: Softer, leafy vegetables like cabbage and bok choy are added near the end of cooking so they remain bright and fresh.
  5. Season and Serve: The final dish is seasoned to taste with fish sauce and pepper before serving.
